- BUTTERMILK COOKIES:
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 - egg
- 1 teaspoon vanilla extract
- 2 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- CHOCOLATE BUTTERCREAM FROSTING:
- 1/2 cup butter, room temperature
- 1/4 cup shortening
- 1/3 cup unsweetened cocoa powder
- 2 cups confectioners' sugar
- 2 tablespoons milk

Step 1For the cookies: in a bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.

Step 2Combine flour, baking soda and salt; add to creamed mixture alternately with buttermilk and mix well.

Step 3Drop by rounded tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 375 degrees for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

Step 4Combine the frosting ingredients; beat until smooth. Frost the cooled cookies. Top with chopped nuts if desired.
