I created these nests when I wanted to create a cookie version of a favorite childhood Easter candy.

Ingredients

  • 16 ounces sweetened flaked coconut
  • 14 ounces sweetened condensed milk
  • 1/2 teaspoon butter flavoring
  • 1/2 teaspoon rum flavoring
  • 1/4 teaspoon green food coloring
  • 144 - jelly beans

How To Make butter rum macaroon nests

  • Step 1
    Preheat the oven to 350 degrees F. Grease a large cookie sheet.
  • Step 2
    In a medium bowl stir together the coconut, milk, flavorings, & food coloring until combined. Drop by heaping teaspoonfuls onto the prepared cookie sheet. Bake for 8-10 minutes or until lightly browned. Gently press the back of a teaspoon into each cookie to make a slight impression. Place cookies on a wire rack. Gently press 3 jelly beans into each impression. Cool before serving.
  • Step 3
    *Note* Vanilla and almond extract may be used in place of the butter & rum flavorings.
