I came up with this recipe about 35 years ago and people still find it to be absolutely delicious and easy to make.

Ingredients
- 1 - beaten egg
- 2 sticks softened butter (only use real butter)
- 1 tablespoon vanilla extract
- 1 cup granulated sugar
- 2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 2 cups chopped roasted pecans
How To Make butter pecan cookies

Step 1Cream together the butter, sugar and vanilla; then beat in the egg.

Step 2Combine the flour, baking soda and baking powder and slowly add to the egg mixture and mix well.

Step 3Stir in the nuts and make sure they are fully incorporated. Form the dough into a log and wrap well in waxed paper.

Step 4Refrigerate until firm (2-4 hours). Preheat the oven to 325 degrees and slice the cookies into 1/4 inch rounds. Place on a non-greased cookie sheet and bake 7-10 minutes until lightly brown on the edges.
