Butter cookies with filling

I was given this recipe 40 years ago from a co-worker. These cookies are a big hit with friend and family to this day. The taste of the cookie which has no sugar and the filling just complement each other.

  • 1 c
    butter, softened
  • 1/2 c
    whipped cream, unsweetened
  • 2 c

  • 1/4 c
    butter soften
  • 3/4 c
    confectioners' sugar
  • 1
    egg yolk
  • 1 tsp
    vanilla extract

How to Make Butter cookies with filling


  1. Mix butter, cream and flour thoroughly. Chill for 1 hour. Heat oven at 375. Roll dough about 1/16" high on flour board.
  2. Cut into rounds not bigger than 1-1/2". Put on a cookie sheet with parchment paper. Sprinkle sugar on top of cookie rounds. Prick cookies with fork and bake for 9 minutes. Put two cookies together with filling.
  3. Filling- you can tint filling with food coloring.
