butter cookies with filling
I was given this recipe 40 years ago from a co-worker. These cookies are a big hit with friend and family to this day. The taste of the cookie which has no sugar and the filling just complement each other.

Ingredients
- 1 cup butter, softened
- 1/2 cup whipped cream, unsweetened
- 2 cups flour
- FILLING
- 1/4 cup butter soften
- 3/4 cup confectioners' sugar
- 1 - egg yolk
- 1 teaspoon vanilla extract
How To Make butter cookies with filling

Step 1Mix butter, cream and flour thoroughly. Chill for 1 hour. Heat oven at 375. Roll dough about 1/16" high on flour board.

Step 2Cut into rounds not bigger than 1-1/2". Put on a cookie sheet with parchment paper. Sprinkle sugar on top of cookie rounds. Prick cookies with fork and bake for 9 minutes. Put two cookies together with filling.

Step 3Filling- you can tint filling with food coloring.
