Ingredients
- 1 cup butter, softened
- 1/4 cup confectioners sugar
- 1 package instant lemon pudding mix, 3.4 ounces
- 2 tablespoons water
- 1 teaspoon vanilla extract (or use almond, etc)
- 2 cups plain flour (can use plain gluten free)
- 1 cup pecans, chopped (or walnuts)
- 2 packages toffee bars (heath bars), chopped, 1.4 ounces
How To Make butter balls (cookies)

Step 1With mixer cream butter and sugar until light and fluffy. Beat in pudding mix, water and vanilla. Remove from mixer stand and stir in nuts and chopped candy pieces. Roll by hand into approximately one inch balls. Place 2 inches apart on ungreased baking sheets. Bake at 325 for 12 to 15 minutes or until lightly browned. Cool 3 to 4 minutes and remove to wire rack to finish cooling. When completely cool sprinkle with confectioners sugar (optional). Makes about 5 dozen.

Step 2NOTE: Substitute toffee candy bars for purchased toffee pieces, mini chocolate chips, chopped fresh fruit such as apples, blueberries and cherries, chopped dried fruit such as peaches and apricots, etc. Use your imagination! If using fruit add some cinnamon.
