This is a recipe I learned to make when I was 10! I tweeked it to make it diabetic EACH COOKIE HAS: 133 CALORIES 15 GRAMS CARBOHYDRATES 1 1/2 GRAMS PROTEIN 7 1/2 GRAMS FAT 11 MILLIGRAMS CHOLESTEROL 98 MILLIGRAMS SODIUM 15 MILLIGRAMS CALCIUM

Ingredients

  • 3 1/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon sea salt
  • 2 sticks plus 2 tbsp room temp butter
  • 7 tablespoons splenda/brown sugar blend (packed)
  • 7 tablespoons splenda/sugar blend
  • 2 large eggs (slightly beaten)
  • 1/2 tablespoon warm water
  • 3/4 teaspoon pure vanilla extract
  • 1 1/2 cups chocolate chips

How To Make bunyan's diabetic chocolate chip cookies

  • Step 1
    Sift together flour, baking soda & salt, set aside for use in step 4
  • Step 2
    Cream the butter with a mixer for 1 minute @ medium speed, add the Splendas, and cream another 3 minutes until light & fluffy, scrape down the bowl
  • Step 3
    Combine the eggs and water, add to the creamed mixture, mix for 1 minute, add the vanilla, mix thoroughly
  • Step 4
    Add the dry ingredients, mix only until the ingredients are completely combined.
  • Step 5
    Add the chocolate chips, mix on low speed until the chips are completely combined
  • Step 6
    Drop by tablespoons on ungreased pans
  • Step 7
    Bake @ 350 for 12 minutes
  • Step 8
    Take the cookies off the pans while still warm
