brunsli - swiss christmas cookies
Found this on a Swiss site. I'd heard of these before, but never had a recipe until now! (Cooking time does not include resting overnight.)

Ingredients
- 5 ounces sugar
- 9 ounces ground almonds
- 1/4 teaspoon cinnamon
- 1/8 teaspoon cloves, ground
- 2 tablespoons cocoa powder
- 2 tablespoons flour
- 1 pinch salt
- 2 - egg whites
- 3 1/2 ounces bitter chocolate, melted
- 2 teaspoons kirsch
How To Make brunsli - swiss christmas cookies

Step 1Mix sugar, salt, almonds, cinnamon, ground cloves, cocoa powder and flour in a bowl. Add egg whites and stir until all ingredients are evenly distributed.

Step 2Add melted chocolate and the kirsch, knead to a soft dough.

Step 3Roll out dough on a flat surface (it may be slightly covered with sugar), approximately 1/2 inch thick. Cut out different shapes and put them on a baking sheet covered with baking paper. Let them rest for about 5 to 6 hours or overnight in a dry place.

Step 4Bake for about 4 to 6 minutes in the center of the pre-heated oven at 250 °C (480 °F).
