Found this on a Swiss site. I'd heard of these before, but never had a recipe until now! (Cooking time does not include resting overnight.)

  • 5 ounces sugar
  • 9 ounces ground almonds
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cloves, ground
  • 2 tablespoons cocoa powder
  • 2 tablespoons flour
  • 1 pinch salt
  • 2 - egg whites
  • 3 1/2 ounces bitter chocolate, melted
  • 2 teaspoons kirsch

How To Make brunsli - swiss christmas cookies

  • Step 1
Mix sugar, salt, almonds, cinnamon, ground cloves, cocoa powder and flour in a bowl. Add egg whites and stir until all ingredients are evenly distributed.
  • Step 2
Add melted chocolate and the kirsch, knead to a soft dough.
  • Step 3
Roll out dough on a flat surface (it may be slightly covered with sugar), approximately 1/2 inch thick. Cut out different shapes and put them on a baking sheet covered with baking paper. Let them rest for about 5 to 6 hours or overnight in a dry place.
