brownie cookies
My favorite part of brownies are the edges. In a cookie, you have "edges" in every bite!

Ingredients
- 2 cups semi-sweet chocolate chips
- 1/4 cup butter (1/2 stick)
- 1 1/2 cups sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips or chunks
How To Make brownie cookies
-
Step 1Preheat the oven to 350ºF. Line baking sheets with parchment paper.
-
Step 2Combine the first 2 cups chocolate chips and butter. Cook over medium-low heat, stirring constantly, until melted and smooth. Do not overcook - there will be a soft ball of chocolate in the pan when it is done - in just a few minutes. Leave in pan.
-
Step 3Combine the sugar, eggs and vanilla extract and beat on medium speed until free of lumps.
-
Step 4In a separate bowl, combine the flour, baking powder and salt. Gradually add flour mixture to the butter-sugar mixture. Beat on medium speed until just combined. Add the chocolate mixture from the saucepan and mix on medium-high speed for 1 minute. Batter may be slightly runny. Stir in the last 2 cups chocolate chips/chunks.
-
Step 5Use a medium cookie scoop or tablespoon and put scoops of batter about 2 inches apart on baking sheets. Bake for 8-10 minutes.
-
Step 6Let rest for a few minutes, then carefully transfer cookies from baking sheet to cooling rack.
