My favorite part of brownies are the edges. In a cookie, you have "edges" in every bite!

Ingredients For brownie cookies

  • 2 c
    semi-sweet chocolate chips
  • 1/4 c
    butter (1/2 stick)
  • 1 1/2 c
    sugar
  • 4
    eggs
  • 1 tsp
    vanilla extract
  • 1 c
    flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    semi-sweet chocolate chips or chunks

How To Make brownie cookies

  • 1
Preheat the oven to 350ºF. Line baking sheets with parchment paper.
  • 2
Combine the first 2 cups chocolate chips and butter. Cook over medium-low heat, stirring constantly, until melted and smooth. Do not overcook - there will be a soft ball of chocolate in the pan when it is done - in just a few minutes. Leave in pan.
  • 3
Combine the sugar, eggs and vanilla extract and beat on medium speed until free of lumps.
  • 4
In a separate bowl, combine the flour, baking powder and salt. Gradually add flour mixture to the butter-sugar mixture. Beat on medium speed until just combined. Add the chocolate mixture from the saucepan and mix on medium-high speed for 1 minute. Batter may be slightly runny. Stir in the last 2 cups chocolate chips/chunks.
  • 5
Use a medium cookie scoop or tablespoon and put scoops of batter about 2 inches apart on baking sheets. Bake for 8-10 minutes.
  • 6
Let rest for a few minutes, then carefully transfer cookies from baking sheet to cooling rack.
