Awesome, chewy fruit and nut filled cookies. Perfect for on the go breakfast! A great way to use up any leftover dried fruits and I had a lot. Yummy!

Ingredients

  • 3 tablespoons honey
  • 1/2 teaspoon baking powder
  • pinch - salt
  • 2 - eggs
  • 1/2 cup coconut oil - melted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 cup almond / coconut milk
  • 2 - mashed , bananas
  • 2 1/4 cups quick oats
  • 1/4 cup crunchy peanut butter
  • 10 ounces mixed dried fruits - i used a cranberry, cherry and raisin mix - plus chopped some dried apricots and pineapples
  • 1 ounce chopped pecans

How To Make ~ breakfast in a cookie ~ oats, fruit & nut

  • Step 1
    Preheat oven to 350 degree F. In a large bowl, combine the oil, milk, cinnamon, salt, honey, vanilla, lemon juice, banana's and eggs. Beat until mixed well, I used a whisk. Whisk in the peanut butter and baking powder. Stir in the oats, nuts and fruit.
  • Step 2
    Place parchment paper on a large cookie sheet and scoop out heaping tablespoonfuls of cookie batter and place 1 1/2 inches apart.
  • Step 3
    Bake for 20 minutes or just until golden on the bottom. Don't overcook. You want them still soft in the center.
  • Step 4
    Cool on rack, then place in a covered container to store.
