When she still had her house she used to store cookies up the stairs into the attic in containers because it stayed like a freezer. I used to sneak cookies when I could, because I could try any kind I wanted. One taste of these stopped my sneaking quickly~they were one cookie I couldn't wait to see all the Aunts come over with plates and eat up. I remember the men watching tv and holding full trays while the women made assorted platters of cookies everyone brought over. Grandma started the first 'Cookie Exchange". After my taste test, they became stored on top of the fridge!

Ingredients

  • 1/4 cup 86 proof bourbon
  • 2 tablespoons dark corn syrup
  • 1 cup vanilla wfer cookies, crushed
  • 1 cup chopped pecans
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa

  • Step 1
    NOTE: Grandma W did not drink, so these were not cookies she tasted. And oh boy, did the bourbon left in the bottom of her cabinet hold QUITE a kick. I made the recipe for my in laws after discussing them, and they agreed they were STRONG!!! Fair warning!
  • Step 2
    Mix together bourbon and corn syrup. Add wafer crumbs, pecans, sugar and cocoa. Mix thoroughly. Spoon 1/2 tablespoon of mixture onto waxed paper and roll into a ball and roll into powdered sugar. Cover tightly and refrigerate at least overnight before serving. Roll a second time in powdered sugar before serving.

    Note: I wonder if these would work out with other alcohol? I personally think amaretto, or caramel vodka would be a good substitute for the bourbon.
