It is that time of year! Nothing speaks of fall like the pumpkins do. Let's celebrate by making Pumpkin Cookies. You will love these light and feathery morsels of goodness that are laced with chocolate and chopped walnuts. So delicious. Your house will smell heavenly, too! Enjoy!

Ingredients For bonnie's pumpkin cookies

  • KITCHEN AID MIXER BOWL:
  • 1 cup canned pumpkin
  • 1/2 cup crisco vegetable oil
  • 1 cup sugar
  • 1 egg
  • SECOND BOWL:
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/ 2 teaspoon salt
  • ADD LAST:
  • 4 drops of red food coloring
  • 2 cups chocolate chips semi sweet
  • 1 tablespoon vanilla extract
  • 1/2 cup chopped walnuts

How To Make bonnie's pumpkin cookies

  • Mix wet ingredients together

    In your electric mixer bowl, mix together the pumpkin, sugar, oil and the egg.
  • Mix dry ingredients together

    Then in the second bowl, whisk flour, baking powder, baking soda, cinnamon and salt.
  • Add flour to wet and mix well

    Now add the second bowl ingredients to the wet ingredients in the Kitchen Aide mixer.
  • Add chocolate chips and chopped walnuts

    Last: Add in the red food coloring, (The cookies won't be orange if you don't use it) vanilla, chocolate chips, and chopped walnuts.
  • Stir to blend

    Give it a quick stir with the paddle.
  • Drop by tablespoons onto parchment paper

    Add cookies to parchment paper on an air cookie sheet by tablespoons and bake in a preheated 375 degree oven until light brown for about 15 to 20 minutes.
  • When cookies are done, remove to a rack to cool
