I get strange looks when asked what kind of cookies these are....but they always go over very well!

  • 1 c
  • 1/2 c
    mixed shortening and butter
  • 1 1/2 tsp
    grated lemon rind
  • 1
  • 2 c
  • 1/4 c
  • 2 tsp
    baking powder
  • 1/2 tsp
  • 3/4-1 c
    blueberries (fresh is best if available)
  • ·
    pecan or walnut halves-optional

How to Make Blueberry Cookies


  1. Preheat oven to 350 and grease cookie sheets.
  2. Cream sugar, shortening and lemon rind until well blended, add egg and beat well.
  3. Sift dry ingredients and add milk. Fold in blueberries. Drop spoonfulls on cookie and top with pecan or walnut half if desired. Bake 12-15 minutes.
