Ingredients
- CHEESECAKE FILLING
- 8 ounces softened cream cheese
- 1/2 cup powdered sugar
- BLUEBERRY COOKIE DOUGH
- 1 cup butter, softened
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 large whole egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup fresh blueberries
How To Make blueberry cheesecake cookies

Step 1Mix the cream cheese and powdered sugar. Line a baking sheet with parchment paper, roll 16 balls of the filling, and place them on the sheet. Place in the freezer for one hour.

Step 2Mix the flour, baking soda, and salt together and set aside.

Step 3In a stand mixer, add butter and both sugars. Mix until creamy. Add the egg, egg yolk, and vanilla.

Step 4Pour in the flour mixture and whip until the dough is well incorporated.

Step 5Remove from the mixer and fold in the blueberries.

Step 6Line 2 baking sheets with parchment paper. Take the filling out of the freezer.

Step 7Place one ball of filling in the middle of some cookie dough, seal the dough around the filling, place it on the baking sheet, and flatten a little.

Step 8Finish with the remaining dough and filling. Place in the freezer while preheating the oven.

Step 9Preheat the oven to 350 degrees F. Bake the cookies for 8 to 10 minutes.
