Ingredients

  • CHEESECAKE FILLING
  • 8 ounces softened cream cheese
  • 1/2 cup powdered sugar
  • BLUEBERRY COOKIE DOUGH
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large whole egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup fresh blueberries

How To Make blueberry cheesecake cookies

  • Step 1
    Mix the cream cheese and powdered sugar. Line a baking sheet with parchment paper, roll 16 balls of the filling, and place them on the sheet. Place in the freezer for one hour.
  • Step 2
    Mix the flour, baking soda, and salt together and set aside.
  • Step 3
    In a stand mixer, add butter and both sugars. Mix until creamy. Add the egg, egg yolk, and vanilla.
  • Step 4
    Pour in the flour mixture and whip until the dough is well incorporated.
  • Step 5
    Remove from the mixer and fold in the blueberries.
  • Step 6
    Line 2 baking sheets with parchment paper. Take the filling out of the freezer.
  • Step 7
    Place one ball of filling in the middle of some cookie dough, seal the dough around the filling, place it on the baking sheet, and flatten a little.
  • Step 8
    Finish with the remaining dough and filling. Place in the freezer while preheating the oven.
  • Step 9
    Preheat the oven to 350 degrees F. Bake the cookies for 8 to 10 minutes.

    Allow to cool and store covered.
