black walnut oatmeal cookies

I got this recipe from my daughter, Amy Herald, another one of the great cooks here on JAP. I modified it slightly by the addition of black walnut flavoring and black walnuts and omitting the raisins because I didn't have any. The result was an outstanding soft cookie that's not too sweet and perfect for the cooler Fall days ahead. I'm sure that Amy won't mind my modifying her recipe a bit and sharing it. Enjoy!

Ingredients

  • 1 cup softened butter (two sticks)
  • 1 cup brown sugar, firmly packed
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon black walnut flavoring
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups uncooked oatmeal
  • 1 1/2 cups black walnuts

How To Make black walnut oatmeal cookies

  • Step 1
    Preheat oven to 350 degrees. Spray a cookie sheet with cooking spray, set aside.
  • Step 2
    In mixing bowl, cream together butter and sugars. Add eggs and beat until light and fluffy. Add flavorings and mix well.
  • Step 3
    Whisk together flour, baking soda, salt, and cinnamon until well mixed. Add to creamed mixture a little at a time and beat on low speed until smooth. Mix in oatmeal by hand. When thoroughly mixed, fold in nuts.
  • Step 4
    Drop by heaping tablespoons onto prepared cookie sheet approximately 2" apart. Bake for 7 to 8 minutes or until cookies are lightly browned. Allow to cool one minute on cookie sheet and transfer to a cooling rack. Enjoy warm from the oven or allow to cool completely. Store remaining cookies in an airtight container.
