Ingredients

2 packages Biscoff cookies (8 oz each)
1/2 cup powdered sugar
1 stick butter, softened
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
2 tablespoons heavy cream, more or less for consistency

How To Make biscoff cookie sandwiches

Step 1

Place 20 of the Biscoff cookies in a food processor. Add the powdered sugar, butter, pumpkin pie spice, cinnamon, and salt. Add one tablespoon of heavy cream.

Step 2

Process until smoothish, adding more heavy cream if needed.
Step 3

Spread between the remaining cookies to make a Biscoff-on-Biscoff sandwich cookie.
