this was my moms recipe she made this up for herself and of course she gave me the recipe

Ingredients

  • 1/2 cup oil
  • 1 cup granulated sugar
  • 1 medium egg
  • 1/4 cup molasses
  • 1 3/4 cups all purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar

How To Make bettys gingersnaps

  • Step 1
    preheat oven to 375.
  • Step 2
    in mixing bowl, beat oil with sugar. beat in egg and molasses. the dough can be quite sticky.
  • Step 3
    using 1 teaspoon per cookie shape dough into ball. place on lightly oiled baking pan sheet and flatten with the palm of your hand.
  • Step 4
    bake for 12-15 minutes. let cool on cookie sheets or racks.
