Ingredients
- 1 stick butter, softened
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1 - egg
- 1 cup creamy peanut butter
- 2 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 3/4 cup chopped peanuts

Step 1Preheat oven to 350 degrees

Step 2In a large mixing bowl cream the butter and sugars together until smooth. Beat in the egg and peanut butter and continue to beat until combined.

Step 3In a separate bowl, sift the flour, salt and baking soda together. Add the peanut butter mixture and stir just until combined. Stir in chopped nuts.

Step 4Drop round teaspoonfuls of the mixture onto a baking sheet and depress the balls lightly with the prongs of a fork. Bake for 8-10 minutes until just cooked through.

Step 5Allow to cool 5 minutes on the baking sheet then transfer to a cooking rack to cool completely.
