best ever snickerdoodles

I chuckle when I make these and get rave reviews because the recipe was a "leftover" from one of my husband's college years. Important baking note: if the cookies brown, they are TOO done!

Makes 36 cookies
Ingredients
- 1 cup vegetable shortening
- 1 1/2 cups sugar
- 2 - eggs
- 2 3/4 cups all purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1/2 teaspoon salt
- FOR TOPPING:
- 3 tablespoons sugar cinnamon mixture
How To Make best ever snickerdoodles

Step 1Preheat oven to 375F. Sift all dry ingredients together in a bowl.

Step 2Cream shortening and sugar, then add each egg, mixing well between additions. Add flour mixture slowly, mixing until well combined and being sure to scrape sides of bowl. You may need to chill dough for a few minutes to make it more easily workable.

Step 3Use small scoop or teaspoons to divide dough into cookie sized portions. roll between hands to form a ball, dip one side of ball into cinnamon sugar mixture and make sure that side is up when the cookie is placed on an un-greased cookie sheet. Place each bit of dough 2 inches apart and bake for 8-10 minutes being careful to not allow too much browning.

Step 4Finished cookie should be light in color and have a soft chewy texture.
