banana peanut butter cookies

One of my favorite flavor combos is Bananas and Peanut Butter. I remember as a child taking a banana and slathering peanut butter on it. I am also making it into sandwiches. This flavor combo was so new to me as a grew up in a Italian immigrant household. So this combo was always so indulgent and brought very happy memories!

Ingredients

  • 1 1/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick butter, softened
  • 1/2 cup smooth peanut butter
  • 1/2 cup crunchy peanut butter
  • 3/4 cup sugar
  • 1/2 cup brown sugar, lightly packed
  • 1 - whole banana, very ripe
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon honey
  • 1 cup peanut butter chips
  • 1/2 cup peanuts chopped (optional)
  • 1 cup sugar for rolling cookie balls

How To Make banana peanut butter cookies

  • Step 1
    Preheat oven to 350ºF. Prepare a baking sheet, preferably with parchment paper.
  • Step 2
    In a medium bowl, combine flour, baking soda, baking powder, and salt. Mix to combine.
  • Step 3
    In a large bowl, cream together butter and peanut butters until light and fluffy. Cream in sugars. Mix in mashed banana until smooth. Add vanilla and honey, mix until combined. Slowly mix in flour mixture, being careful not to over mix. Stir in the peanut butter chips and chopped peanuts (if desired).

    Pour reserved sugar into a bowl. Use a tablespoon to scoop dough then roll into balls. Roll cookie balls in sugar until coated. Place on cookie sheets about 1? apart. Use a fork to gently flatten cookies to about 3/4?. Bake about 9–12 minutes, until edges begin to brown. Cookies may look underdone, but really aren’t! Let cool on the baking sheet for a few minutes, then transfer to a cooling rack.
