These are very good cookies. I've been making these for years.

Easy to make, these banana oatmeal cookies are a nice light dessert or an afternoon snack with coffee or tea. If you like banana bread, you'll love these cookies. They're very similar in flavor and texture. The cookies are tender, moist, and cake-like. We opted to add walnuts to the cookies and sprinkled them on top, and liked the crunch they added. Oats add a little texture, too.

Ingredients
- 1 cup sugar
- 2/3 cup shortening
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
- 3/4 cup mashed bananas
- 1 1/2 cups quick cooking oats
- 2 cups sifted flour
- 3/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/4 teaspoons salt
- 1/2 cup coarsely chopped walnuts; optional
How To Make banana oatmeal cookies

Step 1Preheat the oven to 350 degrees F. Cream the sugar and shortening. Add the eggs and beat on medium-high speed until light and fluffy.

Step 2Blend in both flavorings, bananas, and the oats.

Step 3Sift together all the dry ingredients.

Step 4Gradually add the dry ingredients to the wet ingredients. Stir in the nuts if desired.

Step 5Drop by tablespoons onto a greased cookie sheet or a cookie sheet lined with parchment paper.

Step 6I like to add some chopped nuts on top too, just before baking.

Step 7Bake at 350 degrees for 15-18 minutes. Place on a cooling rack to cool.
