~ banana nut cookies & browned butter frosting ~

I had 5 medium banana's in my freezer that I wanted to use up and the family wanted cookies. They turned out awesome! The browned butter frosting compliments the cookies wonderfully. Enjoy!

Ingredients

  • 1 cup mashed ripe banana's
  • 2/3 cup shortening
  • 1 cup sugar
  • 2 - eggs
  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/4 teaspoon cinnamon - optional
  • 1/2 teaspoon each - banana extract & vanilla extract
  • 1 cup chopped walnuts - divided
  • BROWNED BUTTER FROSTING
  • 1/4 cup butter
  • 2 cups sifted - confectioners' sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 - 21/2 tablespoons cream
  • 1 teaspoon vegetable oil

How To Make ~ banana nut cookies & browned butter frosting ~

  • Step 1
    Preheat oven to 400 degree F. Line sheet pan with parchment paper ( what I use, but not necessary.) If not just use an ungreased baking sheet. In a large bowl, beat shortening until creamy. Slowly beat in sugar until light and fluffy. Beat in eggs one at a time. Beat in extracts. Sift dry ingredients together and alternate adding to wet mixture with smashed banana's. Once good and creamy. Stir in 1/2 cup nuts.
  • Step 2
    Drop by heaping teaspoonfuls on sheet pan about 1 inch apart.
  • Step 3
    Bake for 8 - 10 minutes or until beginning to brown a little around edges. I remove from oven when they look a little under bake, like they could use 1 more minute. They continue baking some once removed and turn out perfect. Remove from pan to cooling rack. Make frosting.
  • Step 4
    In a medium saucepan, over low heat - melt butter and continue to cook until golden color.
  • Step 5
    Remove from heat and swiftly whisk in the extract, sugar, cream and oil. Add more cream if too stiff. It will stiffen more as it cools. Spread evenly on each cookie and sprinkle with remaining nuts.
