Ingredients
- 3 cups flour
- 1 cup butter softened
- 1 teaspoon baking powder
- 1 large egg
- 1 cup sugar
- 1 teaspoon lemon extract
- 4 teaspoons grated orange zest
- 1/4 teaspoon salt
- FILLING
- 1 jar (18 ounces) apricot preserves
- 2 teaspoons lemon juice
- 1 teaspoon grated lemon zest

Step 1In a large bowl, cream butter and sugar. Beat in egg and extract. Combine flour, orange zest, baking powder and salt; gradually add to creamed mixture and mix well. Set aside 1/3 for the topping.

Step 2Press remaining dough into a greased 9 X 13 inch baking pan. Combine preserves, lemon juice, and zest; spread evenly over crust.

Step 3Crumble reserved dough over filling. Bake at 350 degrees for 40 minutes until golden brown. Cool on wire rack. Cut into squares.
