apple peanut butter cookies

I substituted 1/4 cup butter and 3 TBSP coconut oil for the shortening. I did not have crunchy peanut butter so I chopped up a handful of peanuts and stirred them in with the apple. The house smells wonderful after baking these. My hubby is known as the cookie monster and he loves these. I make small cookies so I can have 2. If you use a bigger scoop it will only make about 2 1/2 dozen.

Makes 4 dozen small cookies
Ingredients
- 1/2 cup shortening
- 1/2 cup chunky peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brownsugar
- 1 - egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup peeled and grated apple
How To Make apple peanut butter cookies

Step 1In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy.

Step 2Beat in egg and vanilla.

Step 3Combine the dry ingredients; gradually add to creamed mixture and mix well. Stir in apple.

Step 4Drop by rounded tablespoonfuls onto greased baking sheet 2 inches apart. They will spread.

Step 5Bake at 375 degrees for 10 - 12 minutes or until golden brown. Cool on baking sheet for 5 minutes before removing to wire racks.

Step 6Reduced fat peanut butter is not recommended for this recipe.
