apple delight cookies

I stumbled on these while trying to make the perfect shortbread and thumbprint cookie. I used apple jelly only because I had run out of raspberry and strawberry preserves. The apple were the best ones!

Ingredients
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1/2 cup brown sugar, light
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
- 2 1/2 cups flour
- 1/2 cup apple jelly
- 1/4 cup powdered sugar
How To Make apple delight cookies

Step 1Preheat oven to 350 degrees.

Step 2Cream together the butter, 1/2 cup powdered sugar, the brown sugar, egg and extracts.

Step 3Add in flour.

Step 4Drop by full tablespoons onto baking stone or greased cookie sheet.

Step 5Press into the middle of each cookie to form a tiny cup for the jelly.

Step 6Add jelly to the center of each cookie.

Step 7Bake for 15 minutes or until cookies just begin to turn golden.

Step 8Once cooled completely, dust with remaining powdered sugar.
