I found this recipe on Pinterest and decided to try them as I enjoy anything with apples. The brown butter glaze makes these cookies taste like a slice of apple crisp!

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 1 - egg
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups flour (all purpose)
  • 1 cup quick cooking rolled oats
  • 1 cup peeled, diced apples (granny smith are good marinated in 1 t. sugar and 1/2 tsp. cinnamon)

  • Step 1
    350 degree oven. Peel and chop apple and mix with 1 T. sguar and 1/2 tsp. cinnamon. Set aside. In large bowl, cream butter and sugars together until light and fluffy. Stir in egg and vanilla. Slowly incorporate all dry ingredients. Stir in oats and apples. Form cookies out of about a tablespoon of dough and roll into a ball. Flatten just slightly. Bake 8 - 10 minutes or until the edges are golden.
  • Step 2
    Brown Butter Glaze: 1/4 c. butter 1 c. powdered sugar 3 - 5 T. milk (approx.) 1/4 tsp. cinnamon
  • Step 3
    Place 1/4 c. butter in small saucepan. WIth heat on medium, melt and brown the butter; being careful not to burn it. Once the butter is a medium brown/amber color, remove from heat and pour into a small bowl. Beat in powdered sugar, cinnamon, and enough milk to get a nice glaze consistency. ENJOY!
