apple cinnamon snickerdoodles

I got this recipe from an old friend of mine. It's a different twist of a Snickerdoodle cookie. Hope you enjoy it as much as my family and friends do.

Ingredients

  • 2 medium granny smith apples, peeled, cored, and cut into 1/4 inch cubes
  • 1 1/2 sticks unsalted butter
  • 1 cup light brown sugar, lightly packed
  • 1 cup granulated sugar
  • 3 large eggs
  • 3 1/4 cups all purpose flour
  • 3 tablespoons cornstarch
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 3/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • TOPPING
  • 1/2 cup granulated sugar
  • 1 tablespoon cinnamon

How To Make apple cinnamon snickerdoodles

  • Step 1
    Line cookie sheets with parchment paper. Set oven to preheat at 350.
  • Step 2
    Stir together the following dry ingredients in a large bowl: flour, cornstarch, baking soda, salt, nutmeg, and cinnamon. Set aside--
  • Step 3
    In the mixer bowl, cream the butter until light and fluffy. Add both sugars and mix until fully incorporated. Next, add the eggs, one at a time, and beat until the batter looks well blended. Add the dry ingredients in sections, mixing well after each addition. Remove the bowl from the stand and gently stir in the diced apples.
  • Step 4
    Measure the dough by approximately 1 tablespoon each and roll in the cinnamon sugar mixture until completely coated. Place the balls 2 inches apart on the parchment lined cookie sheets. Flatten slightly .
  • Step 5
    Bake 9 minutes, then turn pan around and bake another 9 minutes. Allow cookies to cool in baking pan ---- Enjoy!!
