Apple Butter Oatmeal Cookies

After making and canning homemade apple butter, I looked for several recipes to use it in. I couldn't find a cookie recipe that I was in love with so I came up with these. These cookies will spread when baking so make sure you chill the dough prior to cooking and in between batches. These cookies are sweet but not too sweet and I used Granny Smith apples for the chopped apples because of the tartness they provide.

Ingredients

  • 1/4 c
    butter, unsalted
  • 1 c
    packed brown sugar
  • 1 large
    egg
  • 3/4 c
    quick oats
  • 1/2 c
    raisins
  • 1 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    baking powder
  • 2 Tbsp
    milk
  • 1/2 c
    small diced apples (Granny Apple preferred)
  • 1/2 c
    apple butter

How to Make Apple Butter Oatmeal Cookies

Step-by-Step

  1. Preheat oven to 350 degrees and line cookie sheet with parchment paper.
  2. In a large mixing bowl cream butter and sugar just till combined. Do not overmix or go over 40 seconds with a mixer.
  3. Beat in apple butter, eggs, and oats.
  4. Mix dry ingredients in a separate bowl.
  5. Gradually add the dry mixture to the creamed mixture along with the milk.
  6. Stir in apples and raisins.
  7. Chill dough for at least 20 minutes in refrigerator.
  8. Drop by teaspoonfuls onto cookie sheet.
  9. Bake for 15 to 17 minutes. Cool on the sheet for a few minutes before removing to a wire rack to cool.
