  • 4 Tbsp
    powder sugar
  • 2 c
  • 1 tsp
    peppermint extract
  • ·
    green food color
  • ·
  • 2 c
    powder sugar
  • 1/4 c
    unsweetened cocoa powder
  • 1/4 c
    hot water
  • 4 Tbsp
  • 1/2 tsp
  • ·
    andes mints, cut in half (to top cookie with)

How to Make Andes Mint Cookies


  1. Mix together first 5 ingredients.
  2. Roll rounded teaspoonfuls into balls and thumbprint.
  3. Bake 7-8 minutes at 350
  4. Whisk together the 5 frosting ingredients until smooth.
  5. Top each cookie with frosting and add half of an andes mint to center.
  6. Frosting will harden in about 30 minutes.
