This is a recipe I made when I was in high school Home Ec, and it's still one of my favorites. The icing tastes like peanut butter fudge...which is never bad, in my book.

  • 1 1/3 c
    all purpose flour
  • 1 c
    brown sugar
  • 1/2 tsp
    baking soda
  • 1/2 c
    peanut butter
  • 6 Tbsp
  • 2
    eggs beaten
  • 2 Tbsp
  • 1 tsp
  • 1/2 c
    quick cooking oats

How to Make Amy's Peanut Oatmeal Bars


  1. Stir together flour, sugar, soda and 1/4 tsp salt. Cut in peanut butter and shortening until mixture resembles course crumbles.
  2. Mix eggs, milk and vanilla. Add to flour mixture with oats and mix well. Spread into lightly greased 9 x 13 pan. Bake at 375 for 12 to 15 minutes. Cool and spread with frosting.
  3. For frosting - mix ingredients below until smooth and spreading consistency.

    1 1/2 c. confectioners sugar
    2 tbsp salted butter
    2 tbsp peanut butter
    2 -3 tsp milk
