This is a recipe I made when I was in high school Home Ec, and it's still one of my favorites. The icing tastes like peanut butter fudge...which is never bad, in my book.

Ingredients

  • 1 1/3 cups all purpose flour
  • 1 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup peanut butter
  • 6 tablespoons shortening
  • 2 - eggs beaten
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1/2 cup quick cooking oats

How To Make amy's peanut oatmeal bars

  • Step 1
    Stir together flour, sugar, soda and 1/4 tsp salt. Cut in peanut butter and shortening until mixture resembles course crumbles.
  • Step 2
    Mix eggs, milk and vanilla. Add to flour mixture with oats and mix well. Spread into lightly greased 9 x 13 pan. Bake at 375 for 12 to 15 minutes. Cool and spread with frosting.
  • Step 3
    For frosting - mix ingredients below until smooth and spreading consistency. 1 1/2 c. confectioners sugar 2 tbsp salted butter 2 tbsp peanut butter 2 -3 tsp milk
