almond sandies

I tweaked this from a recipe for pecan sandies, since my hubby & I don't like pecans. He loves these. He says everyone in his office are always asking when I'm going to make them again. I hope you enjoy :)

Ingredients

  • 1 cup butter ( i use unsalted)
  • 2 1/4 cups all purpose flour
  • 1/3 cup white sugar
  • 1 1/8 teaspoons almond extract
  • 1 cup chopped almonds
  • 1 cup sifted powdered sugar (optional)

How To Make almond sandies

  • Step 1
    In a mixing bowl, beat butter with an electric hand blender until creamed.
  • Step 2
    Add about 1/2 the flour, all of the sugar, almond extract, and 1 tablespoon water.
  • Step 3
    Beat until thoroughly combined. Beat in remaining flour (if dough is too dry, add a little more water).
  • Step 4
    Stir in almonds.
  • Step 5
    Shape into 1 inch balls. Place on an ungreased cookie sheet and lighly flatten with the palm of your hand.
  • Step 6
    Bake in a 325 degree oven for about 20 minutes or until bottoms are lightly browned.
  • Step 7
    Cool cookies on a wire rack.
  • Step 8
    Gently shake cooled cookies in a bag with powdered sugar (if desired).
