I tweaked this from a recipe for pecan sandies, since my hubby & I don't like pecans. He loves these. He says everyone in his office are always asking when I'm going to make them again. I hope you enjoy :)

Ingredients
- 1 cup butter ( i use unsalted)
- 2 1/4 cups all purpose flour
- 1/3 cup white sugar
- 1 1/8 teaspoons almond extract
- 1 cup chopped almonds
- 1 cup sifted powdered sugar (optional)
How To Make almond sandies

Step 1In a mixing bowl, beat butter with an electric hand blender until creamed.

Step 2Add about 1/2 the flour, all of the sugar, almond extract, and 1 tablespoon water.

Step 3Beat until thoroughly combined. Beat in remaining flour (if dough is too dry, add a little more water).

Step 4Stir in almonds.

Step 5Shape into 1 inch balls. Place on an ungreased cookie sheet and lighly flatten with the palm of your hand.

Step 6Bake in a 325 degree oven for about 20 minutes or until bottoms are lightly browned.

Step 7Cool cookies on a wire rack.

Step 8Gently shake cooled cookies in a bag with powdered sugar (if desired).
