Ingredients
- 4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 stick butter, room temperature
- 1 cup sugar
- 1/2 teaspoon coconut extract
- 3 eggs
- 1/2 cup flaked coconut
- 1/2 cup sliced almonds
- coating chocolate
How To Make almond joy biscotti

Step 1Preheat oven to 350 degrees.

Step 2Line a large baking sheet with parchment paper. set aside.

Step 3In a medium bowl, mix together flour, baking soda and salt. Set aside.

Step 4In a large mixing bowl, cream together butter and sugar until smooth.

Step 5Add eggs, one at a time, mixing well after each addition.

Step 6Add extract and mix well.

Step 7Add in one third of the flour mixture at a time and mix well after each addition.

Step 8Stir in coconut and nuts. Dough will be stiff.

Step 9Divide dough into 2 equal parts. Place on parchment lined baking sheet and form each into approximately a 12" X 4" X 1" rectangle.

Step 10Bake in a 350 degree oven for 30 minutes. Remove to a cooling rack and cool 10 - 15 minutes. Reduce oven to 350 degrees.

Step 11Slice each loaf on the diagonal into 3/4 Inch slices.

Step 12Place slices on a baking sheet and bake 10 minutes, turn and bake an additional 10 minutes. Remove to a rack to cool completely.

Step 13When cooled, melt chocolate according to package directions. Spread chocolate on one side of cookie and place on a sheet of parchment to set.
