almond cookies with a twist

My family is a big believer in having dessert after dinner. I was making a Chinese dish one evening and decided to make traditional Almond Cookies. Unfortunately I was out of almond halves but I did have silvered almonds; so I chopped them up and added them to the cookie batter. They were a hit! I've made them several times and each time folks have commented that they like them better than the traditional way!

Ingredients
- 3/4 cup vegetable shortening
- 3/4 cup sugar
- 2 - eggs, divided
- 1 3/4 teaspoons almond extract
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 cup slivered almonds, coarsely chopped
How To Make almond cookies with a twist

Step 1Combine shortening, sugar, 1 beaten egg, and almond extract. Beat well.

Step 2Slowly add baking powder and flour to shortening mixture. Mix well.

Step 3Add chopped almonds. Stir until mixed (do not over mix).

Step 4Divide dough into 30-32 small balls. Slightly flatten with palm of your hand on parchment or wax paper.

Step 5Lightly beat remaining egg. Brush on cookies. Transfer to an ungreased cookie sheet.

Step 6Bake in preheated 350 degree oven for 15 - 18 minutes or until golden brown.
