My family is a big believer in having dessert after dinner. I was making a Chinese dish one evening and decided to make traditional Almond Cookies. Unfortunately I was out of almond halves but I did have silvered almonds; so I chopped them up and added them to the cookie batter. They were a hit! I've made them several times and each time folks have commented that they like them better than the traditional way!

Ingredients

  • 3/4 cup vegetable shortening
  • 3/4 cup sugar
  • 2 - eggs, divided
  • 1 3/4 teaspoons almond extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup slivered almonds, coarsely chopped

How To Make almond cookies with a twist

  • Step 1
    Combine shortening, sugar, 1 beaten egg, and almond extract. Beat well.
  • Step 2
    Slowly add baking powder and flour to shortening mixture. Mix well.
  • Step 3
    Add chopped almonds. Stir until mixed (do not over mix).
  • Step 4
    Divide dough into 30-32 small balls. Slightly flatten with palm of your hand on parchment or wax paper.
  • Step 5
    Lightly beat remaining egg. Brush on cookies. Transfer to an ungreased cookie sheet.
  • Step 6
    Bake in preheated 350 degree oven for 15 - 18 minutes or until golden brown.
