ALASKA: Munch your way across the USA. Selma Lucas, the state of Alaska is now represented. This recipe is from "Capitol Cookies" with recipes from every state & Washington, DC. This recipe was submitted by Capitol City Women's Bowler's Association, Juneau, Alaska, Irene E. Brown, Chairperson. The WBA was putting together their Bowler's Cookbook and Arlene Johnson submitted this recipe for their cookbook. I personally have not made these so, Selma, if you make them, let us know if they make your home state proud.

Ingredients

  • 32 ounces chopped dates
  • 8 ounces candied pineapple
  • 4 ounces green candied cherries
  • 4 ounces red candied cherries
  • 16 ounces chopped pecans
  • 8 ounces chopped walnuts
  • 1 cup all purpose flour
  • 2 sticks butter, softened
  • 1 1/2 cups brown sugar
  • 2 - eggs
  • 1 1/2 cups (additional) all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract

How To Make alaska's fruit cookies

  • Step 1
    Preheat oven to 325. Line cookie sheets with aluminum foil or parchment paper and spray with Pam.
  • Step 2
    Dredge fruit & nuts in the 1 cup of flour and set aside. Sift together the 1 1/2 cups flour, baking soda and cinnamon and set aside.
  • Step 3
    Cream softened butter and brown sugar together. Add eggs and beat until fluffy. Add the 1 1/2 cups flour mixture and combine well. Mix in the vanilla. Now mix in the fruit mixture to incorporate.
  • Step 4
    Drop onto prepared cookie sheets and bake @325 to 350 for approximately 15 minutes.
