    granulated sugar
  • 1 c
    brown sugar, firmly packed

    hot, strong black coffee
  • 2 1/2 tsp
baking soda, dissolved in the coffee
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 tsp
    ginger
  • 1 tsp
    cloves
  • 6 c
    flour

How to Make Addy's Ginger Cookies

Step-by-Step

  1. Mix in the order given. Whisk the spices and salt into one of the cups of flour. Add enough flour to make a soft dough, but no more than 6 cups total. Put the dough in the refrigerator overnight to make it easier to handle. Roll out thin(1/8 inch or less) on a pastry cloth.
  2. Bake in 350 degree oven for 5-8 minutes. Cool 1 minute on cookie sheet. Do NOT grease cookie sheets.
  3. Don't be afraid to handle the dough. Don't use a 4 inch cookie cutter. I have used a 3 inch cookie cutter as well as small cookie cutters shaped as leaves, acorns, etc.
  4. If cookies look pale, they're not done, bake until beginning to turn dark brown color.
