I love 7 Layer Bars or Hello Dolly's but I prefer cookies. They are softer and easier to handle. lol. So this is my rendition of a Hello Dolly in cookie form. The dough is the graham cracker and the ingredients are the layers.

Ingredients

  • 3/4 c
    butter, softened
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar, lightly packed
  • 1
    egg
  • 2 Tbsp
    milk
  • 1 tsp
    vanilla extract
  • 1 1/4 c
    all purpose flour
  • 1 1/4 c
    graham cracker crumbs
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 1/4 tsp
    ground cinnamon
  • 3/4 c
    shredded coconut
  • 3/4 c
    butterscotch chips
  • 1 c
    semi-sweet chocolate chips

How to Make 7 Layer Cookies

Step-by-Step

  1. In a large bowl, cream softened butter and sugars
  2. In a separate bowl, combine flour, graham cracker crumbs, baking soda, salt and cinnamon.
  3. Gradually add flour mixture to cream mixture.
  4. Add 3/4 cup shredded coconut
    Add 3/4 cup Butterscotch Chips
    Add 1 cup Chocolate Chips (semi-sweet)
  5. Roll dough into balls and place on ungreased cookie sheets. The size of the balls will determine the amount of cookies are yielded in the end.
  6. Bake in preheated oven at 375 degrees for 8-10 minutes or until golden brown. Depending on the size of the cookie baking may have to be increased a minute at a time till done.
