I love 7 Layer Bars or Hello Dolly's but I prefer cookies. They are softer and easier to handle. lol. So this is my rendition of a Hello Dolly in cookie form. The dough is the graham cracker and the ingredients are the layers. I hope you enjoy!

Makes approx 2 dozen
Ingredients
- 3/4 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar, lightly packed
- 1 - egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 1 1/4 cups graham cracker crumbs
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 teaspoons ground cinnamon
- 3/4 cup shredded coconut
- 3/4 cup butterscotch chips
- 1 cup semi-sweet chocolate chips
How To Make 7 layer cookies

Step 1In a large bowl, cream softened butter and sugars

Step 2In a separate bowl, combine flour, graham cracker crumbs, baking soda, salt and cinnamon.

Step 3Gradually add flour mixture to cream mixture.

Step 4Add 3/4 cup shredded coconut Add 3/4 cup Butterscotch Chips Add 1 cup Chocolate Chips (semi-sweet)

Step 5Roll dough into balls and place on ungreased cookie sheets. The size of the balls will determine the amount of cookies are yielded in the end.

Step 6Bake in preheated oven at 375 degrees for 8-10 minutes or until golden brown. Depending on the size of the cookie baking may have to be increased a minute at a time till done.
