1Heat oven to 350. Mix 1 cup peanut butter and 1 cup granulated sugar and 1 egg together in bowl, reserving the 3 Tbls's sugar in a cup.
2Scoop & shape small walnut size ball of dough, roll in cup with reserved sugar, place balls on foil lined cookie sheet, using a fork dipped in sugar or flour, criss cross each ball to flatten. Bake for approx 8-10 minutes, depending on how crispy you like them.
3Let cool, remove from pan to cooling racks. Makes approx 24 cookies.
