These little muffins are a great hit with my grand and great grand children with 7 great grand ankle biters these muffins do not last for long. I usually make these little ones for the younger children

Ingredients
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder and cinnamon each
- 1 teaspoon freshly grated nutmeg
- 1/2 teaspoon baking soda
- 1 - egg
- 1 cup milk
- 2/3 cup liquid honey
- 1/4 cup melted butter
- 2 tablespoons fresh lemon juice
- 1 cup grated zucchini {1 small}
- 3/4 cup miniature chocolate chips
- 1/4 cup mini butterscotch chips
How To Make zucchini chocolate chip muffins

Step 1Preheat oven to 375F..butter non-stick mini muffin pans or line with paper liners. In large bowl whisk together flour, baking powder, baking soda, cinnamon and nutmeg.

Step 2In another bowl whisk together egg, milk, honey, butter, lemon juice , until well blended..pour over dry ingredients and mix with wooden spoon,,,add the zucchini and chips and mix just until moistened.

Step 3Spoon batter into 24 deep muffin cups or 36 shallow cups...bake for 15 to 18 minutes or until tops are firm to the touch or use wooden pick to check if done. Let cool in pan for 5 minutes then cool on wire rack..
