Ingredients
- 3 ounces sugar
- 2 - egg yolks
- 4 - whole eggs
- 12 ounces melted chocolate
- 3/4 ounce gelatin
- 3 ounces cold water
- 1 quart heavy cream
- - alcohol of choice
How To Make white chocolate mousse

Step 1Whip cold cream to soft peaks

Step 2Heat eggs, sugar and yolks over a oduble boiler, careful not to cook the eggs. Just disolve the sugar.

Step 3Stain eggs and whip to 2/3 in volume.

Step 4Bloom gelatin in the cold water.

Step 5Melt the chocolate.

Step 6Melt the gelatin.

Step 7Fold gelatin into the eggs.

Step 8Mix chocolate into the eggs.

Step 9Fold cream into the eggs.

Step 10Add liquor (optional)
