How to Make White Chocolate Mousse
- Whip cold cream to soft peaks
- Heat eggs, sugar and yolks over a oduble boiler, careful not to cook the eggs. Just disolve the sugar.
- Stain eggs and whip to 2/3 in volume.
- Bloom gelatin in the cold water.
- Melt the chocolate.
- Melt the gelatin.
- Fold gelatin into the eggs.
- Mix chocolate into the eggs.
- Fold cream into the eggs.
- Add liquor (optional)
