    egg yolks
  • 4
    whole eggs
  • 12 oz
    melted chocolate
  • 3/4 oz
  • 3 oz
    cold water
  • 1 qt
    heavy cream
  • ·
    alcohol of choice

How to Make White Chocolate Mousse


  1. Whip cold cream to soft peaks
  2. Heat eggs, sugar and yolks over a oduble boiler, careful not to cook the eggs. Just disolve the sugar.
  3. Stain eggs and whip to 2/3 in volume.
  4. Bloom gelatin in the cold water.
  5. Melt the chocolate.
  6. Melt the gelatin.
  7. Fold gelatin into the eggs.
  8. Mix chocolate into the eggs.
  9. Fold cream into the eggs.
  10. Add liquor (optional)
