uber chocolate banana bread

If you are a chocoholic and need a fix... this yummy bread will easily fill the bill. Three types of chocolate, bananas and nuts... need I say more? This is my adaptation of a recipe on eat8020.com.

Ingredients

  • 1 cup cake flour
  • 1 cup whole wheat flour
  • 1 tablespoon fresh ground flax seed
  • 1/2 cup unsweetened cocoa powdered
  • 1 1/2 teaspoons baking powder
  • 1/3 cup light brown sugar, firmly packed
  • 1/3 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/4 cup french vanilla liquid nondairy creamer
  • 4 medium overripe bananas, mashed
  • 5 ounces bittersweet chocolate
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped nuts

How To Make uber chocolate banana bread

  • Step 1
    Preheat oven to 350 degrees F. Lightly spray a loaf pan with nonstick spray. Set aside.
  • Step 2
    In a bowl, combine the cake flour, wheat flour, ground flax, cocoa powder, and baking powder in a bowl. Set aside. ** If you don't have cake flour, you can sub 1 cup all purpose flour minus two tablespoons, then add 2 tablespoons corn starch and sift together 4 or 5 times. This will equal 1 cup of cake flour.
  • Step 3
    In a large bowl, combine sugars, egg, vanilla, liquid creamer, and mashed bananas; blend well.
  • Step 4
    In a small microwaveable bowl, melt chocolate at 50% power for 1 1/2 minutes. Stir well and microwave in 30 second increments, stirring after each 30 seconds, until melted. Stir well until cooled slightly.
  • Step 5
    Stir dry ingredients into banana mixture just until blended. Fold in melted chocolate until evenly mixed. Pour into prepared pan. Sprinkle mini chips and nuts on top of batter. Press down lightly with hand or back of a spoon.
  • Step 6
    Bake for 55-60 minutes or until toothpick comes out clean. Cool completely before slicing.
