I love Mole, it's really tasty and very different. It is very popular in New Mexico and Mexico.

Ingredients
- 1/2 cup slivered almonds
- 1/2 teaspoon vegetable oil
- 2 1/8 medium dried ancho or anaheim chillies, stemmed, seeded and chopped
- 1 cup chopped onion
- 2 cloves garlic
- 1 - chipoltle chile in adobo
- 1 1/2 cups fire roasted crushed tomatoes
- 1 tablespoon sugar
- 1/2 teaspoon cumin
- 1/4 teaspoon sea salt
- 1/8 teaspoon ground cinnamon
- 1 ounce semi-sweet chocolate, chopped
- 2 - 6 in size corn tortillas torn into pieces
- 1 tablespoon white wine vinegar
- 1/2 cup chicken broth
- 1 1/2 pounds turkey (or chicken) thighs
- - cilantro spring, optional
How To Make turkey mole recipe

Step 1Heat oil in a large skillet over med-high heat. Add the Chillies and saute 1 minute or until soft. Add the almonds, onion and garlic and saute 4 minutes or until onion is lightly browned.

Step 2Spoon the mixture into a food processor, add the chipotle chili, sugar, spices, chocolate, tortilla pieces, vinegar and broth and process until smooth.

Step 3Add the turkey pieces and spice mixture to the slow cooker, and stir to coat.

Step 4Cover and cook on low-heat for 5-8 hours. Don't stir this during cooking. Remove and serve with a side of rice.
