I love Mole, it's really tasty and very different. It is very popular in New Mexico and Mexico.

Ingredients

  • 1/2 cup slivered almonds
  • 1/2 teaspoon vegetable oil
  • 2 1/8 medium dried ancho or anaheim chillies, stemmed, seeded and chopped
  • 1 cup chopped onion
  • 2 cloves garlic
  • 1 - chipoltle chile in adobo
  • 1 1/2 cups fire roasted crushed tomatoes
  • 1 tablespoon sugar
  • 1/2 teaspoon cumin
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon ground cinnamon
  • 1 ounce semi-sweet chocolate, chopped
  • 2 - 6 in size corn tortillas torn into pieces
  • 1 tablespoon white wine vinegar
  • 1/2 cup chicken broth
  • 1 1/2 pounds turkey (or chicken) thighs
  • - cilantro spring, optional

How To Make turkey mole recipe

  • Step 1
    Heat oil in a large skillet over med-high heat. Add the Chillies and saute 1 minute or until soft. Add the almonds, onion and garlic and saute 4 minutes or until onion is lightly browned.
  • Step 2
    Spoon the mixture into a food processor, add the chipotle chili, sugar, spices, chocolate, tortilla pieces, vinegar and broth and process until smooth.
  • Step 3
    Add the turkey pieces and spice mixture to the slow cooker, and stir to coat.
  • Step 4
    Cover and cook on low-heat for 5-8 hours. Don't stir this during cooking. Remove and serve with a side of rice.
