This is a "tweeked" Special K bar recipe. I made a few changes to the original recipe I was given, and I think it improved it!

Ingredients

  • 1 c
    light karo syrup
  • 1 c
    sugar
  • 1 1/3 c
    creamy peanut butter
  • 6 c
    rice krispies
  • 1+ c
    chocolate chips
  • 1+ c
    peanut butter chips*

How to Make "Special" Special K Bars

Step-by-Step

  1. Bring Karo syrup and sugar to a rolling boil. Remove from heat and add the peanut butter until it's melted and smooth.
  2. Remove from heat and add the peanut butter until it's melted and smooth.
  3. Stir in Rice Krispies, and mix well. (using rice krispies instead of Special K cereal makes the bars softer & chewier)
  4. Press mixture into a butter greased pan.
  5. Melt together chocolate chips and peanut butter chips*, stir until smooth.
  6. Spread over the top of the cereal mixture and let cool.
  7. *butterscotch chips can be used in place of peanut butter chips for a variation
