This is a very old recipe handed down to my mother from her mother then handed down to me. I love this frosting on any cake, vanilla or chocolate, but it is especially good on a Black Magic Cake.

Ingredients For soft chocolate frosting for black magic cake

  • 6 oz
    1 oz. squares of unsweetened chocloate
  • 3 lg
    egg yolks
  • 1 1/4 c
    sugar
  • 3/4 c
    milk
  • 1 1/2 Tbsp
    butter
  • 1 pinch
    salt
  • 2 tsp
    pure vanilla extract
  • 2 1/2 tsp
    instant coffee

How To Make soft chocolate frosting for black magic cake

    Melt chocolate in saucepan over hot water. Beat egg yolks in heavy saucepan until very thick. Add Sugar and beat smoothly together.

    Add milk, instant coffee and butter, stirring well. cook over very low to med.low heat, stirring constantly until it comes to a boil. Cook for 1 minute only after it reaches the boiling point.

    Remove from heat, stir in chocolate, add salt and vanilla. Beat until it reaches a good spreading concistency. It will spread nicely.

    Makes enough to use between two layers and to frost the top and sides of cake. Note: this frosting has glossy appearance and stays soft.
