soft chocolate frosting for black magic cake

This is a very old recipe handed down to my mother from her mother then handed down to me. I love this frosting on any cake, vanilla or chocolate, but it is especially good on a Black Magic Cake.

Ingredients
- 6 ounces 1 oz. squares of unsweetened chocloate
- 3 large egg yolks
- 1 1/4 cups sugar
- 3/4 cup milk
- 1 1/2 tablespoons butter
- 1 pinch salt
- 2 teaspoons pure vanilla extract
- 2 1/2 teaspoons instant coffee
How To Make soft chocolate frosting for black magic cake

Step 1Melt chocolate in saucepan over hot water. Beat egg yolks in heavy saucepan until very thick. Add Sugar and beat smoothly together.

Step 2Add milk, instant coffee and butter, stirring well. cook over very low to med.low heat, stirring constantly until it comes to a boil. Cook for 1 minute only after it reaches the boiling point.

Step 3Remove from heat, stir in chocolate, add salt and vanilla. Beat until it reaches a good spreading concistency. It will spread nicely.

Step 4Makes enough to use between two layers and to frost the top and sides of cake. Note: this frosting has glossy appearance and stays soft.
