This is a recipe that was handed down to me from my great-grandmother. I don't know where she got it from, but i sure do love serving this and seeing the expressions on people's faces when they find out what's in it. I absolutely love it...I hope when you make it, you love it too.

Ingredients For pinto bean fudge

  • 1 c
    cooked pinto beans (i prefer fresh from the crockpot but you can use canned)
  • 1/2 c
    milk
  • 6 oz
    unsweetened baking chocolate
  • 6 Tbsp
    margarine
  • 1 tsp
    vanilla flavoring
  • 2 lb
    confectioners' sugar

How To Make pinto bean fudge

    In bowl, mash beans with the milk until it is the consistency of mashed potatoes.

    Heat chocolate and margarine in double-boiler until melted. Stir into bean mixture until slightly thickened.

    Add vanilla and confectioner's sugar. Beat until blended.

    Spread into buttered 9x12 dish. Chill (I do this for about 2 hours), then cut into squares.
