peppermint patty fudge cookies

Its a family favorite! Between my 3 kids and my husband they are almost gone as soon as I make them!

Ingredients
- 1 cup all purpose flour
- 1 tablespoon all purpose flour
- 1 1/4 cups cocoa powder
- 1/4 teaspoon salt
- 8 ounces semi-sweet chocolate chips
- 2 - eggs
- 1 teaspoon vanilla extract
- 5 tablespoons butter (room temp)
- 3/4 cup light brown sugar
- 1/4 cup sugar
- 14 - york peppermint patties
How To Make peppermint patty fudge cookies

Step 1-Sift together flour, cocoa powder and salt in a medium bowl -Melt chocolate in microwave for 1 min, stir. Melt 30 secs increments until melted and smooth. Set aside. -Whisk together eggs and vanilla, set aside

Step 2-With beater beat butter until smooth and creamy. beat in egg mix in, add melted chocolate, beat until combined. Add dry ingredients, fold in chocolate chips. -Chill dough for 30 mins. -Preheat oven to 350 degrees.

Step 3-Scoop out about 2 tbsp of dough. Roll into ball, press a few pieces of peppermint patty on top of each cookie ball. -Bake for about 10 mins, or until cookies have begun to set, with centers still appearing very soft. Cool and enjoy the gooey fun!!
