How to Make Mexican Hot Chocolate
- Boil water. Remove from heat, add chocolate. Wait 1 minute. Whisk until melted.
- On medium high, gradually whisk in milk, cinnamon & almond flavoring. Cook to full boil, whisking frequently. Remove from heat to allow bubbles to subside. Replace on burner. Boil again. Repeat 3 times.
- Lower heat to simmer. Simmer 5 minutes, stirring constantly. Cocoa should be thick enough to coat the back of a spoon. Turn off the heat, blend with a hand-blender until top is nice and foamy.
