grandma's devil's food cake
This recipe was passed down to my mother from her mother-in-law, my grandmother. Devil's food cake has always been my favorite cake and this is the one that I fell in love with as a child. Now I have inherited the recipe from my mom who passed away 4 years ago. Of course, my grandmother's recipe used lard in her cake, my mom used vegetable shortening; but I prefer to use softened butter, but have also made it with coconut oil which was very good as well. Whatever shortening you decide to use, it is a cake that is delicious. I also like to frost with different icings depending on my mood.

Makes 2 8-inch layers about 1 3/4 inches deep
Ingredients
- 13/4 cups sifted cake flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup shortening/butter,softened
- 2 large eggs, at room temperature
- 4 ounces melted chocolate squares, unsweet
- 1 teaspoon pure vanilla extract
- 1 cup buttermilk
How To Make grandma's devil's food cake

Step 1Sift flour, salt, and baking soda together.

Step 2Cream shortening/butter and add sugar gradually. Cream until light and fluffy.

Step 3Add eggs, beat well; add melted chocolate and vanilla and beat until thoroughly combined.

Step 4Alternately add buttermilk with flour mixture. Beat until smooth.

Step 5Divide batter evenly between 2 eight inch, greased and floured cake pans, (I like to dust my pans with unsweetened cocoa powder).

Step 6Bake at 375 degrees for 25 - 30 minutes or until tests done with toothpick.

Step 7Cool in pans for 10 minutes. Then remove from pans and cool on wire racks until completely cooled. Frost with your favorite frosting. My favorites are: Seven minute frosting or Fudge Frosting.
