Ingredients
- 4 large eggs
- 3 cups sugar
- 1 1/2 cups vegetable oil
- 3 squares unsweetened chocolate, melted (3 ounces)
- 3 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 3 cups grated zucchini
- 1 cup chopped walnuts, toasted (optional)
How To Make gram's chocolate zucchini bread

Step 1Preheat oven to 350 degrees F. Grease and flour 2 or 3 loaf pans (Pans should be at least 2/3 full of batter.) Set aside.

Step 2In the bowl of an electric mixer, beat eggs until thick and light. Gradually add sugar, beating after each addition. Add oil and chocolate and mix well.

Step 3In a separate bowl, combine the flour, baking powder, baking soda and salt. Add to wet ingredients at low speed.

Step 4Add zucchini (and nuts if desired) and mix by hand until well combined.

Step 5Divide evenly among prepared panes and bake for 45-50 minutes or until toothpick inserted near the middle comes out clean.

Step 6Cool in pan for 10 minutes then transfer to cooling rack to cool completely.
