I've been looking for this recipe. It is one of my favorite brownie recipes. The brownies are frosted with a mint frosting and then another layer of unsweetened chocolate goes on top that hardens. The sweetness and the bitterness make a very interesting combination.

Ingredients For glazed mint-frosted brownies

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/2 cup chopped walnuts
  • 1/2 cup flour
  • 1 tsp vanilla
  • 2 eggs
  • 2 squares unsweetened chocolate, melted and cooled
  • mint frosting (recipe follows)
  • chocolate glaze (recipe follows)
  • MINT FROSTING
  • 1 cup confectioner's sugar
  • 2 tbs butter
  • 1 tbs milk
  • 1/2 tsp peppermint extract
  • CHOCOLATE GLAZE
  • 2 tbs butter
  • 2 sqares unsweetened chocolate

How To Make glazed mint-frosted brownies

    Beat butter, sugar, vanilla, eggs, and 2 squares of melted chocolate together.

    Stir in nuts and flour.

    Spread in 8 x 8 x 2 inch pan and bake at 350 degrees for 25 minutes.

    Cool.

    Prepare mint frosting by mixing 1 cup of confectioner's sugar, 2 tbs softened butter, 1 tbs milk, and the peppermint extract.

    When brownies are completely cool, spread on the mint frosting. Let stand until set

    For the chocolate glaze, melt 2 tbs butter. Add 2 squares of unsweetened chocolate and stir until all is melted. Pour the chocolate glaze over the brownies and chill until firm.

    Bring to room temperature and cut.
