I've been looking for this recipe. It is one of my favorite brownie recipes. The brownies are frosted with a mint frosting and then another layer of unsweetened chocolate goes on top that hardens. The sweetness and the bitterness make a very interesting combination.

Ingredients

    1/2 cup butter, softened
  • ·
    1 cup sugar
  • ·
    1/2 cup chopped walnuts
  • ·
    1/2 cup flour
  • ·
    1 tsp vanilla
  • ·
    2 eggs
  • ·
    2 squares unsweetened chocolate, melted and cooled
  • ·
    mint frosting (recipe follows)
  • ·
    chocolate glaze (recipe follows)
  • MINT FROSTING

  • ·
    1 cup confectioner's sugar
  • ·
    2 tbs butter
  • ·
    1 tbs milk
  • ·
    1/2 tsp peppermint extract
  • CHOCOLATE GLAZE

  • ·
    2 tbs butter
  • ·
    2 sqares unsweetened chocolate

How to Make Glazed Mint-Frosted Brownies

Step-by-Step

  1. Beat butter, sugar, vanilla, eggs, and 2 squares of melted chocolate together.
  2. Stir in nuts and flour.
  3. Spread in 8 x 8 x 2 inch pan and bake at 350 degrees for 25 minutes.
  4. Cool.
  5. Prepare mint frosting by mixing 1 cup of confectioner's sugar, 2 tbs softened butter, 1 tbs milk, and the peppermint extract.
  6. When brownies are completely cool, spread on the mint frosting. Let stand until set
  7. For the chocolate glaze, melt 2 tbs butter. Add 2 squares of unsweetened chocolate and stir until all is melted. Pour the chocolate glaze over the brownies and chill until firm.
  8. Bring to room temperature and cut.
