My friend Parthenia used to make this one for us when we would go visit her. It is an easy recipe and we think of her everytime I fix it. Sorry to say we moved further away and haven't been able to visit. Thinking of you Par!

Ingredients
- 9 ounces cool whip
- 2 small pkgs. instant french vanilla pudding (vanilla will work if you can't find french vanilla
- 3 cups milk
- 1 box plain graham crackers
- ICING
- 2 ounces chocolate, unsweetened squares melted
- 3 tablespoons margarine or butter
- 1 teaspoon vanilla
- 3 tablespoons milk
- 2 tablespoons syrup (any kind)
- 1 1/3 cups powdered sugar
How To Make eclair cake

Step 1Line 9x13 buttered cake pan with whole graham crackers. Combine pudding with milk and beat till set. Fold in cool whip. Spread evenly 1/2 of mixture on crackers. Make another layer of crackers and remaining pudding mixture. Top with layer of crackers again.

Step 2Melt chocolate in sauce pan with butter, vanilla, milk and syrup. Mix well and remove from heat. Add powdered sugar and mix until it starts to loose its shine. Pour over top layer of crackers. Put in refrigerator to set. Usually takes a couple of hours for the crackers to soften up.
