Ingredients
- - brownie base:
- - 2 cups sugar
- - 1 cup unsalted butter, softened to room temperature
- - 1 1/2 tsp. pure vanilla extract
- - 4 large eggs, lightly beaten
- - 1 1/2 cups flour
- - 2/3 cup unsweetened cocoa powder
- - coconut cluster topping:
- - 2 cups sweetened toasted coconut
- - 1 cup half and half
- - 1/4 cup superfine sugar
How To Make coconut cluster brownies

Step 1Heat oven to 350. Lightly grease a 15 x 10 inch baking pan.

Step 2For brownie base, in medium bowl with electric mixer, beat together sugar and butter til light and fluffy. Add vanilla and eggs, blending well.

Step 3Add flour and cocoa; mix well. Spread into prepared pan.

Step 4For coconut cluster topping, mix ingredients in a small bowl. Spread over batter. Bake for 25 to 30 minutes or til cake tester or toothpick inserted near center comes out with a few moist crumbs attached. Topping will be golden. Cool pan completely on wire rack. Cut into bars. Makes about 3 1/2 dozen.
